(1 cup of banana :) then either in a separate bowl (or just right on top of the wet ingredients if you are lazy like me), add the flour, blended oats, baking soda, baking powder, and salt.

In the bowl of a stand mixer or by using a hand mixer, cream butter and sugar together. Combine the flour, baking soda and salt, stir into the butter mixture until smooth. Beat in the oil, eggs, and vanilla extract.

Place butter, eggs, bananas, sour cream, and lemon juice in blender or work bowl of food processor. It was so fluffy, sweet, moist and full of banana flavor. This will result in extra tender bread.

In a large bowl combine bananas, granulated sugar, cinnamon, and salt. It’s our favorite way to use up overripe bananas and it freezes really well too! I usually freeze the second loaf, then vacuum pack and put back in the freezer for later.

Then in medium bowl cream shortening and sugar. Stir into dry ingredients just until moistened. Next, mix almond flour, coconut flour, granulated sweetener, cinnamon, baking powder and salt together.

This recipe uses all brown sugar to sweeten the banana bread. It is a “quick bread” which means the leavening agents in the batter are baking soda and baking powder, rather than yeast, which is used in regular bread recipes. You’ll know it’s done when you see some moist bread sticking to your tester toothpick.

The banana bread is nice and moist with crispy edges and doesn’t require a lot of ingredients. Using both brings out the best flavor and texture. Get it nice and fluffy.
