And all of the magic takes place in the food processor! Canned chickpeas, or garbanzo beans, will do if you don’t have ample time to make hummus. Each method uses 1 heaping tablespoon of kosher salt in the water and 1 teaspoon of baking soda.

Add a little water if it looks too thick for your liking. I’m ashamed to say that back in 2017, we posted a deeply inauthentic hummus recipe. Place the chickpeas in a large bowl with 1 teaspoon of the baking soda and cover with plenty of water.

If you are unsure, keep cooking them. Add the chickpeas, aleppo pepper, cumin, caraway and coriander and cook, stirring occasionally, until the spices are fragrant and the chickpeas are heated through, about 10 minutes. To serve, spread the hummus in a shallow bowl, dust with paprika, top with parsley and more tehina sauce if you like, and drizzle generously with oil.

Place the chickpeas in a large pot with the remaining 1 teaspoon baking soda and add cold water to cover by at least 4 inches. Zahav’s hummus recipe is a two step process, but i’ve simplified it here into one. This leads me to my 2 major pieces of advice for making delightfully fluffy hummus:

Pour the tahini on top, making sure to scrape it all out of the container, and add the salt and cumin. Canned chickpeas are still pretty firm, and will never give you the same smooth texture you can get from boiling the dried ones into oblivion. The hummus is best served while it’s still warm.

1 cup dried chickpeas or 2 cans cooked chickpeas 2 tsp baking soda (divided) juice of 2 lemons 6 cloves garlic. Homemade hummus doesn't have to take hours.
