Seared Tuna Recipe Sesame

If your skillet is not big enough for both steaks, then cook them one at a time. Add the tuna steaks, turning to coat them completely with the marinade.

Place the sesame seeds on a large plate and gently press both sides of tuna steak in sesame seeds to coat. Peel and finely grate the ginger, then add to a bowl with the soy, 1 teaspoon sesame oil and the remaining sliced garlic. Arrange the tuna in the pan (do not overcrowd) and cook until the white sesame seeds start to turn golden.

Combine the white and black sesame seeds in a small bowl and set aside. The vinegar can be balsamic, rice vinegar, white vinegar, lime juice or lemon juice. This makes an excellent appetizer!

Once marinated, coat the tuna with sesame seeds. Combine the white and black sesame seeds on a plate and spread in a thin layer. Remove to a board to rest.

In a searing pan over high heat, warm the oil until smoking. To sear the tuna, season tuna steaks with salt and pepper, and coat the steaks with sesame seeds on both sides, pressing them down to stick to the fish. Add the black sesame seeds to the plate if using, and stir seeds around with fingertips to combine.

Put the sesame seeds in another dish or on a plate and then dip the steaks on all sides into the sesame seeds to coat them evenly.

Take your ahi and lather on sesame oil. Pour sesame seeds onto a plate and pat tuna steaks onto seeds to coat evenly. Season the tuna with salt and pepper and dredge in the sesame seeds, coating the tuna evenly.

In a medium sized mixing bowl, whisk the egg whites to stiff peaks. In a shallow dish, add sesame seeds and stir to mix if using black and white seeds. Sear on one side for 10 to 20 seconds.

Season them with salt and pepper. To make the sesame crusted seared tuna steaks: Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.

Place steaks in the pan, and sear for about 30 seconds on each side. Brush both sides of each tuna steak with 1/2 teaspoon (each) vegetable oil. Place in the hot pan with 1 tablespoon of olive oil and sear for 1½ minutes on each side, so it’s beautifully golden on the outside but blushing in the middle.

I used lovely, flavorful avocado oil. Rub the miso all over the tuna, then pat on the sesame seeds to cover. Place steaks in the frying pan, and sear for about 30 seconds on each side or cook to desired taste.

On a plate add and mix your sesame seeds to create a mixture, toss your ahi tuna in the sesame mixture. The ratio for a vinaigrette is 3 parts oil to 1 part vinegar. Season them with salt and pepper.

For the oil, you can use olive, vegetable, canola, grapeseed, etc. In a non stick pan, warm the oil until smoking, arrange the tuna in the pan (making sure not to overcrowd) and cook until the white sesame seeds start to turn golden underneath (around 1 minute). Brush the tuna pieces on all sides with olive oil.
